  • 現今餐飲產業因生活品質提升而蓬勃發展,每間餐廳都嘗試找尋維持品質又可吸引顧客的方法,這導致餐廳經理面臨時間限制及滿足顧客需求的問題,為了解決此問題,本論文將烹飪視為專案(project)並且應用工作分解結構(Work breakdown structure, WBS)的技術。真實世界中的許多專案,可將其複雜的架構以邊(arc)及節點(node)建置成網路模型,專案網路可以被廣泛的應用在現實的生活中,如建築、系統發展、供應鏈管理與醫院等,並透過分析專案網路的方法評估其績效,專案可靠度就是衡量網路的一個重要的指標。專案網路主要由活動(activity)構成,再於計算時考量爐具的容量(capacity)及活動之時間狀態(duration state),接著我們以找尋上界向量的演算法幫助我們計算專案可靠度,並透過實際訪察洋蔥餐廳(Mr. Onion),根據製作餐點流程以及洋蔥餐廳相關資訊建立洋蔥餐廳多階專案網路(Mr. Onion multistate project network),以時間研究(time study)方法計算活動的標準工時,進而計算活動之時間狀態。本文的目標是要衡量此餐廳專案之尖峰時間可以滿足餐點數量(demand)之可靠度,餐廳經理以專案可靠度為一指標來衡量餐廳之服務水準。


    In these days, the restaurant industry rises with the promotion of living standards. Every restaurant tries to find ways to retain the quality and attract new customer. That situation makes restaurant managers facing dual challenges: time constraint and fulfill customer demand. To solve the problems, the cooking is regarded as a project and Work breakdown structure (WBS) is used in this thesis. Many real-world projects can be built into a network using arcs and nodes. A network model can be widely used in real life such as, building construction, system development, supply chain management, and hospital construction, and we can therefore further evaluate the performance by analyzing the project network. Also, project reliability is an important network performance index. A project network is mainly constructed by activities, and the capacity of cooker and the duration state of activity is also concerned in calculation. Moreover, we use an algorithm for upper limit vectors which can help in the assessment of project reliability. An American restaurant, Mr. Onion, is used as a case study in this thesis. Mr. Onion multistate project network (MMPN) is constructed based on the cooking process and the related information about Mr. Onion. We use time study to measure the time spent on each activity and obtain the standard time. Then, the duration state of each activity can be constructed. The goal is to evaluate the project reliability of MMPN within the rush hours and satisfy the demand of D courses. The manager of the restaurant uses the project reliability to evaluate the service quality of the restaurant.
